A short review on the HPLC analysis of phenolic acids, as a group of antioxidants, in various plant samples (herbs, trees, shrubs, fruit and vegetable) is presented. The paper is focused mainly on sample preparation techniques used before HPLC analysis. The HPLC conditions (stationary phases, mobile phases, detection mode) are summarised and evaluated for method development of phenolic acids in different plant materials.
