Thermochemistry – physico-chemical properties of emulsions containing natural compounds
Specialization lecture
Course contents:
• History of calorimetry development.
• Heat transfer theory, and heat transfer actions.
• Thermochemistry, thermochemical measurements and references.
• Additives in thermochemistry.
• Classification of calorimeters: constant-flow, differential scanning calorimetry (DSC).
• Methods of calorimetrical measurements
• Colloidal state definition. Colloids: classification, receiving methods.
• Thermodynamically stable disperse systems.
• Micellar systems structural parameters. Structure of natural membranes.
• Micells, reversed micelles, lipids vesicles, double layer – natural membranes
modeling systems.
• Classifications of surfactants, their structures and properties depending on
the solvent polarity.
• The biologically active compounds solvation in the systems mimicking natural
membranes – investigations with calorimetric methods.
